Ha, baker by day, app developer by night, respect. There's something very grounding about a job that ends with an actual tangible product you can eat.
I'm in a similar boat, solo indie developer building Code and Sea alongside a full-time corporate job. My exit fantasy is a quieter life by the coast rather than covered in flour, but the underlying plan is pretty much identical to yours. Build something intentional, make it work without you, then check out gracefully.
