I saw this problem first hand. We were building with LLMs and the costs were all over the place. One good week of usage and the bill was unrecognisable. The real issue was what it did to our customers. They couldn't stomach variable pricing. Every conversation about cost turned into a negotiation about usage limits, and nobody wanted to sign a contract on a number that could change month to month.
