What is your favorite thing to cook?

My favorite thing to cook is more of a style than a particular 'recipe'. As a Louisiana native, stews, pilafs, and braises are in my heart. I have discovered the same techniques present in all cultures across the world, and Indian cuisine particularly matches up well. So end up cooking curries and pulao dishes at least twice a week.
