Bitcoin-Safe 2.0 is out. It's a free/open-source desktop wallet where seed phrases never touch the computer. Every wallet requires a hardware signer (on mainnet). It offer a testnet playground for educational purposes. The release has a few angles that might fit your needs! More details about this release at
