What's the most unexpected way you've seen technology impact a traditionally non-tech industry?

Canvana / In Canada a company called Canada Drives. Essentially allowing people to purchase previously owned cars entirely online. Thrived during covid which at that time (while I was working for them) made sense. Post Covid they really struggled to justify the entirely online model. I think there are some industries where people just feel more comfortable in person but it was very cool to see a traditionally non-tech (very unchanged in 100 years) industry - Pivot to e-commerce/no brick and mortar and in just as fast a time struggle to the point of creditor protection.
