Looking to create a Knowledge Base, Support Docs, and Product Demo videos and looking for a straightforward platform to use.

I'd say Coda. Here choose one that's works for you. https://app.capacities.io/home/2... For product demo videos, I'd say, upload to YouTube and make it unlisted. Then embed anywhere and everywhere.
