Hey PH, Brock here.
I spent 5 years as General Manager of a bar in San Bernardino County (Cosmos Taverna). Writing schedules, pulling inventory, costing recipes, training bartenders on pour cost, running tip pools.
Every "free" restaurant calculator I tried wanted my email and a follow-up call before showing the math. I just wanted to calculate food cost percentage with inventory inputs. Built one. Then a labor calc. Then 14 more.
What I tried to get right that the SaaS calculators usually don't:
• Recipe cost handles yield loss (tenderloin runs about 30% trim. Most calcs ignore this and understate plate cost by a third)
• Food cost does true COGS from inventory (Opening + Purchases minus Closing), not just purchases
• Tip pool has FLSA section 3(m)(2)(B) compliance flags built in. BOH-in-pool only legal if no tip credit is taken. That is the part that gets operators sued
• Labor cost separates wages from full burden (taxes + benefits + workers comp). Most operators undercount labor by 15 to 25% because they only look at wages
• Math shown under every result. If you do not trust the number, you can verify by hand
