How do you figure out your true target audience when your early users are all over the place?

It's a really weird feeling having a decent number of signups on paper but having zero clue what your actual ideal customer looks like. You look at your analytics and see one group living inside your app daily while another batch signed up months ago and never came back. When you're trying to design features for two completely different types of users at the same time you end up satisfying nobody.
Looking back do you wish you had niched down right from day one or is it better to cast a wide net early on just to see who sticks around?

What helped me was asking at signup, not guessing from analytics later. My app has a three question quiz before sign up: who the song is for, gender, age. The answers are stored with the account, so they can be joined to what people actually do. That is how I found that one ad cohort was 8 of 20 under 18, while every paying user so far was 35 or older. Signups alone said nothing; two or three facts asked up front and joined with purchases told me at least who the customer is not, which is half the answer. Casting wide is fine as long as each signup tells you who they are.
