Really depends on what kind of product you're launching and what you're trying to get out of the launch.
Generally tuesday to thursday is most competitive, whereas monday and friday are a bit less.
Weekends are great for smaller indie projects or small side projects that you want to share with the community.

Depends. If you want a lot of traffic, then during the week is best- tues-thurs are the most active days. But if you don't have an existing userbase or a solid support system, then your product will be near the bottom and therefore getting no clicks.
If you're wanting #1 or top 5 product of the day and don't have many existing users or a big support system, then the weekend is best. But won't generate as much traffic.
So need to consider things like this when picking the day to launch
