Obsidian hands down - the community plugin rock !!!
you can do away with folders - just create map of contents with bi direction linking
and Dataview (allows you to do task managment in whatever style you want
its hard to start but you grow and grow into it till you cant use anything else - took me a month - now i cant use any thing else

The notes app on my phone to be honest plus a cute pen and paper would also work for me! I can freshen up the notes into something concrete with Notion and Google Docs after a moment but in the moment, these two work the best!
