What are the challenges in discovering new niche for sales, marketing, content making?

So, I recently read a great post on Twitter (sorry, not calling it "X" haha) about different approaches to discovering new niches. So what I'm trying to ask is how do you approach discovering new niches and is there a problem at all?

Example, there is a huge fanbase of Sweded films (amateur remakes of famous scenes) and that's the niche I wouldn't have thought of if I hadn't watched the movie "Be Kind Rewind".

I was stunned because there are so many different overlooked niches around!

I must say, thats in interesting niche you did find.

Often, I find niches just by scratching my 'own itch'. So I run into a situiation as, "why isnt there X for Y". After some research its normally smaller or not looked at. By quickly rolling out some form of MVP you can test if its even relevant.
