Everyone seems to be building for the web, or mobile - but is anyone building a desktop app (regardless if it's electron/tauri or something else).

Hello! 
To answer your question - No, we are currently building another cloud-based app. 
We have a desktop app, but in our case it has shown that the cloud-based one is, compared to the desktop one, more scalable and cost-effective due to less maintenance while offering users more flexibility.
