How do you deal with data leaks of your email address?

With the recent leak of data by doordash I'm wondering how folks are dealing with their leaked data. I suppose there are 2 main buckets of users: the first likely uses the same email address all over and there isn't much they can do if their email is leaked. The second (likely much smaller group) of users has used some email obfuscation like mailinator, idblock, or landmark. My question is: assuming you can blackhole the email you used to sign up for doordash, would you login to doordash and update a new email address, or would you just create a new account? If you collect email addresses have you considered what you would do if the data was leaked? I wonder what people have planned for when this happens to their product?
