What's your favorite note-taking app?

2020 laid the foundation. And 2021 has seen an explosion of note-taking apps from the ubiquitous Notion to the back-linked Roam Research. From the old companion, Apple Notes to the fresh-looking, Craft. And how has this changed your behavior? Have you modified your approach to fit new apps, or tweak the apps to fit your workflow?
