Way to get yourself the best job ever. Do your pairings usually reflect the best representations of a certain region or just the best quality you can find? It would be cool to get an Oregonian Pinot Noir paired with smoked salmon and some bleu.
Also it would be fun to toss in a little description of the history/description of whatever region so folks know why Oregon Pinot's and Norcal Chardonnay's are as good as they are. You could detail the businesses as well.

Our pairings typically represent the best quality we can find. I agree regional pairings would be really fun and that's definitely something we are exploring. However, it always comes down to the logistics of finding businesses in those regions who make quality products at the right price points - much easier said than done!
We always include a nice pairing sheet that details the products, how they were made, a background on the producer and pairing notes. We make it an enjoyable learning experience for all ages/experience and create long-lasting connections between our customers and these small businesses.
