Yes data is totally offline, only thing which is totally up to user is to store backup file on google drive (optional) in case they remove app or something so data can be recovered.
The offline-first approach is a breath of fresh air, and seeing my actual yearly subscription costs totaled up was a bit of a wake-up call.
