Small teams: what happens to your phone calls when no one can pick up?

I'm curious how small service businesses handle calls they can't answer: after hours, during a rush, or when everyone's on another call. Voicemail? An answering service? Forwarding to someone's mobile? AI?

And if you've tried an AI receptionist, what made you trust it, or stop trusting it?
