Shiraz from cooler climates tend to have more moderate silky tannins, red and black fruit characters. These lend themselves well with game, duck, mushrooms, pastas. It's often a great match with red meats especially if the alcohol content is higher. And the flavours and aromas will show beautifully. If you serve it too warm, the alcohol will overpower all the other aromas and flavours and will make the wine taste too dull.
