I have launched an identical product for Ethereum ERC-20 tokens back in 2018 called shard.me. I couldn't find product-market fit and who was the target audience ultimately. What's your take on this? Who is the target customer?

The market has progressed a lot since then. There are a lot of new opportunities such as metaverse, gaming, DEFI, social, community, ticketing, real-world asset tokenization, governance voting, etc.,
so a token can potentially apply to any industry. We have also seen billions of dollars invested in Web 3.0 startups. I am sure in the next few years we are going to see more large companies that will find product-market fit. Mine is still in its early stages, with no additional functionalities. A basic token generator could be useful for developers to do testing, small community owners to reward members (loyalty program), or exclusive access for token owners with private events or a token-gated website.
