Sorry to be harsh, but cameras can be spied on. iOS regularly gets critical security updates. We're entering a future in which, through machine learning, it will be as easy to Google a face and get (audio)visual results, as it is to Google a name now. Making sensitive videos that need to be 'locked' like this, on a device that's connected to the internet, or regularly connects to the internet, is simply not a good idea. Regardless of the way in which the data is stored after recording.
