How much control does the user keep before publishing? Can they review/edit the structure and SEO targets first, or is it designed to be mostly one-click?

You get complete control. While it can also run on one-click autopilot, you can use the Content Studio to review, edit, or refine content, tags, metadata, and schema before anything goes live. There are also advanced settings to fine-tune keywords, audience, tone, CTAs, etc before publishing or queuing.
